Bulgur with Paprika
I adore bulgur, and I combine it so often, my favorite in a series of combinations ....
- Heat the oil very slightly in a larger, deeper pan. Add the finely chopped onion and fry for a few minutes.
- Now add the diced paprika, add salt, add the tomato puree and simmer over a moderate heat for about 10 minutes, so that the paprika is almost cooked.
- Now add the bulgur and mix well, add more spices to taste, add parsley and pepper. Pour in the liquid and cook until the bulgur is cooked through, until it softens, not too much, for about 10 minutes.
Serve topped with yogurt, a great combination.
