Bulgur soup / soup of bulgur and paprika
One traditional Turkish soup with bulgur.
- Properite bulgur with running water, Set aside, Finely chop the peppers and hips. Heat the oil in a pot, add the finely chopped onion and simmer briefly, add the chopped pepper and continue to simmer until everything softens a bit. Add the bulgur, mix it a little with the vegetables. Sprinkle with flour, stir. Add the tomato concentrate and cover everything with the stock to taste. Cook for 15 min. Add salt and steam. Serve hot sprinkled with parsley.
