Cod risotto

Cod likes to hang out with parsley, bay leaf, pepper, olive oil, wine, and the result is always satisfactory for us. Soak the cod 24 hours earlier, and offer freshly grated parmesan with the risotto.

Preparation steps

  • Rinse the cod under running water, then soak it in cold water and leave to soak for 24 hours.
  • Drain the soaked cod and cook in a little water for about 10 minutes.
  • Remove and chop the cod and save the water. Put rice in that water and cook for 5 minutes.
  • Finely chop the onion and fry in olive oil until golden yellow. Add chopped tomatoes, crushed garlic, cod, bay leaf, rosemary and simmer over low heat for about 15 minutes.
  • Finally add the rice, pour in the wine, pepper and simmer for another 10 minutes.

Serving

Serve sprinkled with chopped parsley.

Advice

You can mix 1 tablespoon of parmesan in the risotto.
