Bulgur pilaf with vegetables
- Fry the chopped onion and carrot in olive oil, then add the garlic and chopped canned tomatoes. Then add the bulgur and a part of the prepared soup. Stir and cook for about 5 minutes. Then add the chopped zucchini, chickpeas, mushrooms and salt and pepper. 20 minutes with stirring and adding soup. The liquid should be reduced, then add spinach, cumin and chilli and cook for another 5 minutes.
Serve with a spoonful of yogurt and fresh coriander (if you like)
