Leche Frita - Fried milk
This is a famous Spanish delicacy, the name is a bit strange but it is very tasty and easy to prepare… Ah, and not so expensive :-)
Preparation steps
- The milk is put to boil with a sprig of cinnamon and orange peel.
- Mix egg yolks with sugar and semolina or corn flour that is dissolved in a little cold water.
- Pour boiling milk over it and mix well.
- Put all this on the fire, and do not stop stirring, until the mass thickens, and then take it out in a flat dish to cool.
- When cool, cut into squares and dip in flour and eggs as for breading.
- Fry in hot oil. When they are golden-yellow, they drain well and are sprinkled with sugar and cinnamon. Instead of cinnamon, you can use vanilla in a bar and vanilla sugar.
Serving
They are usually served with the so-called. "Natillas", which would be almost identical to our vanilla pudding
