Preparation steps

  • If you bought a whole fish you have to clean it. That is, cut off the head and tail and remove the entrails.
  • I personally cut the fish to get two halves because it bakes faster.
  • Chop the onion and garlic. Salt, season and pepper the fish. Sprinkle with onion and pour a little oil over the garlic. Rub everything well into the fish and set aside to marinate for about 30 mins.
  • Before baking, shake the garlic and onion and roll the fish in corn flour. Fry in hot oil until it gets a nice color on both sides.
  • Place the roasts on a paper towel to soak up excess fat. Serve with potato salad.
