Norwegian cream soup of fish and shrimp

Norwegians like to warm their cold days with soups, and the most popular are those made of fish, shellfish and vegetables with the addition of cream and white wine. Fish and shrimp cream soup is just like that. If you don’t have shrimp, use shellfish.

  • Cut carrots and celery into cubes, and onions into slices.
  • Clean the prawns and add them to the fish together with the prepared vegetables, and salt. Cook over low heat for about 20 minutes.
  • Towards the end of cooking, add the wine, pepper, cream and olive oil.

Serving

Sprinkle with parsley and serve with toasted bread cubes.
