Cod pate

Whenever I cook cod I set aside a little for this fine pate.

Preparation steps

  • I always make this pate when I cook dried cod, mostly bianco. So, depending on the manufacturer, you can soak cod for about two days, changing the water often (especially if the weather is warm). Cook the cod in water for about 20 minutes, until it softens. approximately 150 g for the pate, the rest is made as desired. Boil the egg firmly, clean it and let it cool. Clean the anchovies (if you have cleaned fillets, you do not need to clean them further) Put the cod in a mixing bowl, add all the ingredients and mix. I never chop cod to the end as a paste because I love pieces of cod in pate. After mixing, salt and steam the pate as needed. Cool the pate well before serving.

Serving

Serve with olives, tomatoes and capers on a thin fetica of wholemeal bread.
