Bruschetta / Krostini / Kanapei / Appetizers ...
Last weekend before Ninci left, I think I made over a hundred of all possible sizes and colors :) For everyone, something sweet and salty, and fruits and vegetables, and meat and seafood :) And now it's out of control - so let's move on :)
Preparation steps
- Fine fresh bread; baguette / ciabatta and the like, cut into fetishes neither too thin nor too thick - preferably obliquely. They say it’s good to use bread that is at least a day old (decide for yourself). Coat them with olive oil or butter and put in the oven but don’t overcook them! After they are baked, add a little salt, rub some with garlic, some with lemon or orange peel and some with chili - depending on further processing. Depending on how and how many bruschettas / crostini you serve, you also "fill" them with topping. If there will be crostini, small "finger food" snacks, it is not necessary to put a lot of ingredients on them. If the feta, bruschettas are larger and will be eaten with a fork and knife, feel free to "load" them. (I asked them to slice my bread in the store, some of them are already sliced - so they are not nicely sliced as they should be for bruschettas and crostini because their machines have only one setting - I also used a grill / toaster so small fetishes get really fast bake and "crush", so be careful). You can make your little sweet snacks with darker bread, pumpernickel, or sandwich bread sliced in various shapes, or tortillas cut into desired shapes, some crackers, etc ... and it will equally serve as a base for sliced cucumber or a piece of hard cheese. You can also put small delicious, sweet and / or salty snacks in baskets that are very easy to make from purchased crusts, puff pastry and wonton leaves. NaraFski you can mix them yourself (your choice). You can also buy ready-made baskets and choose the filling yourself :) You can also bake slightly thicker pancakes and cut them into interesting shapes and place the filling on them, etc. You can also serve snacks in small cups, depending on what it is about. Wrap asparagus, beans, cheese, etc. in prosciutto, etc. There are countless combinations, ideas of this and that :) I personally adore various small snacks, I generally like "finger food". I love small varieties, whether they are seafood, fruits, vegetables, chocolate, salty and / or sweet :)
- Bruschetta with Ricotta Cheese and Strawberries Cheese, honey, pepper, strawberries, vinegar (balsamic) and chopped basil. Wash and chop the strawberries and put them in a bowl and sprinkle with balsamic vinegar and let them stand for at least 15 minutes. Ricotta cheese is mixed with honey and pepper. Spread cheese on the toasted bread, put strawberries and chopped basil leaves on top.
- Bruschetta with Ricotta Cheese and Raspberries Same as above only the raspberries do not need to be marinated in vinegar. Crush half of the raspberries with a fork and place over the cheese, fold the rest of the raspberries over. Drizzle everything with a few drops of balsamic vinegar.
- Krostini with Feta Cheese & Honey Crush the cheese a little with your fingers or a fork and apply on the toasted bread. Place in the oven for a few minutes. Remove from oven and drizzle with honey. Sprinkle with thyme leaves or chives.
- Bruschettas with fresh tomatoes Take the tomatoes out of the fridge at least half an hour before cooking. In a bowl, mix the sliced tomatoes, chopped purple onion, crushed garlic, olive oil, salt and pepper, red yeast and chopped basil leaves. Mix everything and let it stand for about 15 minutes. Arrange heaps of tomato salad on toasted bread. Drizzle a few drops of balsamic vinegar on top.
- Bruschetta (Greek Salad) Remove the tomatoes from the refrigerator at least half an hour before cooking. In a bowl, mix sliced tomatoes, chopped purple onion, chopped olives, chopped cucumber, chopped feta cheese, olive oil, sourdough, salt and pepper. Let stand for about 15 minutes. Arrange Greek salads on toasted bread. Drizzle a few drops of olive oil on top.
- Tear off the crostini with Buffalo Mozzarella and Chili Pepper with your hands and arrange it on toasted, sprinkled and garlic-rubbed bread. Put finely chopped hot chili over the cheese, salt with freshly ground salt and pepper, sprinkle with chopped basil leaves and pour a few drops of olive oil.

- Krostini with Goat Cheese, etc. Blueberries, mangoes, walnuts, honey, thyme leaves, parsley, etc. Creamy goat cheese has a specific taste and goes fantastically with fruit, nuts and honey. Coat the bread with cheese and arrange the fruit on top.
- Krostini with Goat Cheese, etc. Or, for example, toast the walnuts, chop them and sprinkle over the cheese, then drizzle with honey (fantastic combination). Or, for example, mix cheese with chopped parsley leaves, thyme or spring onions (green part only) and coat with slices of bread.
- Chimichurri Avocado Bruschetta Cut the avocado in half, remove the stone and cut the beautiful and beautiful green "meat" into cubes and add and mix with spices (crushed garlic, hot chilli, dried oregano, butter oil, tartaric acid, lemon juice, paprika juice, lemon juice). ). Let it stand for a few minutes, then spoon the avocado on the toasted bread and enjoy :)
