Barley soup with Tyrolean bacon


Preparation steps

  • Boil the bacon in 1.5 liters of water. Add the bay leaf and allspice and cook on low heat for about 90 minutes.
  • Put the barley in cold water and cook for about 5 minutes. Then drain it and rinse with cold water. Add it to the bacon and cook. Peel the washed and cleaned vegetables and cut them into slices or rings. Cut the peeled onion into slices
  • Add all vegetables, except leeks, 30 minutes before the end of cooking. Add the leeks 10 minutes before the end. Take out the bacon and cut it into small pieces, then put it back in the soup and spices. Serve garnished with parsley.
