Anchovies the way mom does it
If you like small blue fish (anchovies and sardines), and you do not want your apartment to smell like fried fish because that smell is difficult to remove, I recommend this recipe which is very simple, very tasty and the apartment quickly returns to normal. Don’t get me wrong, I adore fried sardines and anchovies, but sometimes I don’t want to stink for two days. Thank you mom for this! :-)
- Turn the oven to 180 degrees. Cover the baking tray with annealing paper.
- Sprinkle the paper with olive oil and place the cleaned and washed fish in rows, one next to the other. Drizzle the anchovies well with olive oil and salt.
- Randomly place the tomatoes that you have cut into larger pieces, the flaxseed into slices, toss the olives and capers, season everything with rosemary and bake in a preheated oven for at least 20 minutes. You will see when the fish is done. And that's it! You can increase or decrease all the ingredients depending on your wishes!
Serve with a large bowl of salad, or with baked potatoes or with boiled potatoes seasoned with a little olive oil, parsley and salt. You can also make a salad of potatoes and small salads (chicory, dill, riga) ... a combination as much as you like. And you can eat them with a little more olive oil, a piece of fresh bread and a glass of wine. :-)
