- Whisk together 4 egg whites.
- In another bowl, mix 4 egg yolks and 1 whole egg with a mixer, add flour, mineral water, milk and salt, and when it is well mixed, add oil in the amount you want. If the mixture seems thin, add a little more flour. Stir well, then add the beaten egg whites. Combine carefully with a wooden spoon.
- Peel an apple and a pear and cut them into thin slices. Put in a sherpa, sprinkle sugar and vanilla sugar over it, pour water to soak the fruit and put it to cook. When the mixture boils, reduce the temperature of the hob to the lowest and cook like any other compote until the fruit softens. Just before the end of cooking, add dried cranberries. Stir everything well and cool.
