"Topenica"
The other day on TV in the show "Taste of Tradition" I watched the preparation of a Macedonian traditional dish called "Gostivarska topenica". It is a bread or bread prepared from white wheat and corn flour in a slightly unusual way at least for me. Today I prepared this melted in a slightly smaller amount and with some changes in the ingredients, in both tests I added a little yogurt and according to the original recipe there was no filling and I put grated hard cheese and fragrant salt in the middle of the cake - I think it's a full hit. Very soft, aromatic , delicious-ideal combination of two types of flour and for appearance ... who doesn't deny the recipe thinks it's a multi-layered cake. I got the answer BRAVO MOM from my son !!!
Preparation steps
- From the listed ingredients, knead the first white dough, which should be soft and elastic. Cover with a cloth and let it rest for about 10 minutes, during which time prepare the yellow mixture.
- Yellow dough is a mixture that should be a thick paste and not a dough that is kneaded by hand. You add lukewarm water to get a thick mixture that you mix with a spoon. I measured all the ingredients and wrote down the amount of ingredients I put in. Cover the bowl with a lid and let it rest for a while.
- We coat the 26cm mold with margarine. We put the dough on a floured work surface and divide it into 6 parts {there were 4 in the recipe and you like it}. We shape the balls. From the first ball the crust is collected in the mold a little. We coat the crust with a little oil {preferably with a brush}.
- Using a spoon, place a part of the yellow mixture over the crust, if you divide the dough into 6 balls, then calculate that you have 6 times to coat the yellow mixture.
- You put the crust over the yellow mixture and repeat the procedure. According to the recipe, it was like that until the end and after the third applied yellow mixture I put grated hard cheese and over the cheese I put colorful salt that I often use {crushed allspice, mint, cubrica ...} you you can add herbs to your taste and you can do without it. Repeat the process and after 6 of that peel put the remaining yellow mixture. Drizzle a little oil and brush. Cover the mold with a lid and leave the melter to soak for about 15-20 minutes while the oven heats up.
- Bake for about 15 minutes at 200c and then reduce to 170c and bake for another 20-25 minutes. I forgot to say that before baking I put small pieces of margarine on the surface {only 4-5 pieces to make my crust softer}
