Prosciutto with tuna
Prokelj is at the top of the list of foods that should be used in LCHF and Zelena Kura. It has only 45 calories per 100 grams and is rich in vitamins, minerals and fiber. In this dish it goes well with tuna and fried sesame. If olive or coconut oil is used the recipe is fasting.
Preparation steps
- Clean the broth. Cut the larger heads into quarters, and cut the smaller ones in half. Bring water with 1 teaspoon of salt to a boil, add the broth and cook for about 5 minutes. Strain the cooked prosciutto, rinse with cold water and leave to drain. A healthier option is to steam the prosciutto.
- Fry 3 tablespoons of sesame seeds in a pan over low heat without adding fat. Be careful not to darken. Transfer them to a bowl.
- In the same pan, fry the finely chopped leeks in the fat. Add drained tuna and prosciutto. Fry everything together and after 2 minutes add sesame seeds. Add salt and pepper. If desired, add a little more fat (I add a piece of butter). Fry everything for a few more minutes. Finally sprinkle with parsley leaves.
