Pencil salad

Of course, pencils are pods, long, rounded just like pencils, yellow or green. Every year the first picked pencils end up in this simple salad.

Preparation steps

  • Wash the beans and cut to the desired length.
  • Peel the carrots and potatoes and cut them into sticks. Chop the herbs. I had parsley, celery and dill.
  • Mix everything and cook, preferably steamed.
  • Season cooked vegetables. If it is steamed, add very little or no salt, add black ground pepper, oil (pumpkin is best for this salad) and vinegar if desired (apple for me).

Serving

With meat or vegetable dishes. It can also be a light meal with the addition of a little cheese.
