Istrian fuži with truffles
Praised truffles will be experienced in the most original edition if you prepare them with fuži. Prepare fuži yourself by following our suggestions, and if you are not able to get fresh truffles, the same purpose will be used to buy truffle sauce.
- To prepare the fuži, sift the flour, make a hollow in the middle and add eggs, oil, wine and salt and knead a firm dough with a little water. Roll out the dough thinly and cut it into strips 3-4 cm wide, and then cut them into squares also 3-4 cm wide.
- Shape the joints by folding the opposite ends of each square over each other and pressing them with your finger to fit well together.
- Put the fuži to boil in boiling, salted water. Drain the cooked ones and pour over the truffle sauce.
- To prepare the truffle sauce in butter, fry the grated truffles briefly. Add water, Vegeta, pepper, parsley and bring to a gentle boil.
Pour the prepared sauce over the fuži, sprinkle with grated cheese and serve.
