Guacamole and quail eggs
This can be done the day before, you will only have to fry the eggs before serving, and the small snacks for hanging out with your friends are really fantastic.
Preparation steps
- Guacamole can be made the night before, I didn't, I made it the same day. Peel an avocado and grate it with a fork. Cut the young onion into small pieces and add it to the avocado, clean the hot pepper from the veins and seeds and finely chop it and add it to the avocado mass, finally add the chopped coriander and lime juice, salt and pepper and combine everything. Set aside.
- Cut the bread into thinner pieces (this looks nice on ciabatta or baguette bread, but if you don't have it, use the bread you have) and pour over with very little olive oil and bake briefly in the oven just to brown it a bit. Fry the quail eggs, but leave the yolks to rot, but if you don't like them to be rotten, fry them the way you like them. Chop the prosciutto or tear it into smaller pieces.
- Put one spoon of avocado spread on the toasted bread, put pieces of prosciutto over it, fried egg of quail over the prosciutto, sprinkle with a little salt and coarsely ground pepper and serve.
