Green summer pindzur
My cool friend Sephia has a green tomato and she loves the green color so much that she doesn't know if the tomato will turn red because of that.
Preparation steps
- Cook tomatoes and peppers until soft.
- Drain and clean the cooked vegetables from the stalks; beat in a mortar (if you don't have one, you can also use a deeper metal bowl). Add beaten garlic or onion powder and salt to taste.
- Heat the oil. To know when it is hot enough, add a few drops in the prepared vegetables. If it bursts, then it is warm enough so that you can add the whole prepared amount with a short stirring. .
Serving
This is a pindzur made by my grandmother. She told me that in the old days, red tomatoes were not used for human consumption. She served them with homemade sheep cheese.
