Exotic bacon

If you like a combination of meat, pineapple and of course curry, this is a complete hit. Pork chops can be replaced with chicken fillets.

Preparation steps

  • In a bowl, mix a little flour, salt, pepper and a teaspoon of curry. Roll each bacon in this mixture and fry in a little oil on both sides, just enough to get the color and catch the crust. Remove the bacon and place in a fireproof dish.
  • Fry pineapple slices in the same oil (if necessary add a little more) and arrange them on the bacon. Save the pineapple juice! Drain the marinated mushrooms (save water) and throw them over the pineapple.
  • Fry two teaspoons of curry (good quality) in the same oil, add two teaspoons of flour, mix and pour in pineapple juice and mushroom water. Boil a little while stirring, add liquid sour cream and cook for another minute. Serve over bacon and bake for about 30 minutes .on 200¤.
  • Wash the basmati rice under a stream of cold water and fry it in a little oil, stirring constantly. Pour the soup (maybe a cube) over two fingers above the rice. As soon as it boils, reduce the temperature to the lowest, cover and leave until all the liquid boils. this way the rice remains shaken and each grain is whole.

Serving

Serve the bacon with rice and mango chutney hot.
