Drunk Damson
For feasting in this simple cute dessert, the ideal time is spring when you are getting rid of winter to summer, but also this autumn-winter time when you have plums in stock in the freezer.
Preparation steps
- For quick preparation, put the frozen plums on a low heat to relax slightly, then remove the pits.
- Add quality red wine, brown sugar, a little cinnamon if desired and cook until the plums are soft. Spread with a stick mixer. Leave them to cool.
- To serve, mix the sweet cream into the whipped cream, add the mascarpone cheese and bourbon vanilla sugar.
Serving
Prepare 2 cups. Alternately put in glasses of plum puree and whipped cream with mascarpone and leave to serve in the cold.
