Cod with mozzarella and tomatoes

Another simple recipe with fresh (frozen) cod.

Preparation steps

  • salt cod fillets, sauté, add herbs
  • in the pot in which we will bake the cod
  • between arrange pieces of tomato (in 4 parts)
  • slic the mozzarella thinly and cover the fish and tomatoes
  • sprinkle with grated cheese and basil leaves
  • still pour good oil
  • oven at 220 degrees. on the top rack of the oven for about 20 minutes

Serving

Today I served as a side dish young leeks baked on a Teflon pan (previously marinate onions in olive oil and herbs). Fry onions until wilted. With that salad: young fresh spinach, lettuce from my garden complemented with tomatoes, corn, olives mozzarella, radishes, paprika "hearts".
