Chicken paprika with knuckles
This is how my late grandmother cooked paprikas, my mother makes it that way, and here I am continuing the tradition.
- Dice the onion and sauté it briefly in a little oil. # Add peeled and sliced carrots, celery, diced peppers, bay leaf. # While it is simmering, wash the meat, separate the drumsticks from the thighs, cut the white meat in four and add it all to the stewed vegetables. # Simmer for about 10 minutes or until the meat is slightly white. Meanwhile, clean the potatoes and cut them into cubes. Add it to the meat, immediately add allspice and if desired, then simmer, stirring occasionally for about 5 minutes. Now add hot water, so much so that it covers everything well in the sickle. # Cover and cook on low heat, again for about 10 minutes! # In the meantime, prepare the knuckles by beating the eggs with a fork, adding flour, semolina and a little water. Leave it to stand while the paprika is cooking. Finally, add a spoonful of tomato puree and remove the nails with a fork or spoon as you see fit. The paprika is ready when the potatoes are finely mashed with a fork and when the meat is easily separated from the bones and when the dumplings swell finely and float to the surface! sprinkle with finely chopped parsley, add pepper as desired!
