- Whisk in the egg whites and sugar. Add ground walnuts and pretzels, then combine. Pour into a mold (24 cm) lined with baking paper. Bake at 180 C for about 15 minutes. Prepare two more crusts in the same way. Cool down.
- Steam the egg yolks with the sugar and vanilla sugar. After about 10 minutes, add the broken cooking chocolate and instant coffee. When the chocolate has melted, leave the cream to cool. Add softened butter, then mix. Leave in the fridge to allow the cream to set. Fill the cake. Coat the whole cake with cream, decorate as desired ... or just sprinkle with ground walnuts. Cool well, then cut into pieces!
