Buns are Arabic bread that is served, for example, with kebabs or similar. The dough is inflated during baking so as to create a pocket that you can fill to taste ....
- Crumble the yeast and pour over warm water, stir until the yeast melts. Add salt and most of the flour. Knead the dough until it begins to separate from the pan. Cover and let rise for 1 hour in a warm, draft-free oven. Preheat the oven to 250 degrees.
- Mix the dough and divide into 2 equal parts. Roll each part into an oblong roll and then cut each roll into 8 equal slices. Heat a baking sheet, which you have not previously lined with paper or greased, until it becomes very hot. Roll the slices into circles.
- Put about 6 pieces at a time in a large baking sheet or put as many as you can. Bake the buns in the middle of the oven for about 4-5 minutes until they take on color and swell. Cover them with a cloth and let them cool. Cut a hole lengthwise and serve.
The buns are best just taken out of the oven. If you have any left, coat them with oil and sprinkle with sesame or poppy seeds or your favorite spice. Then preheat them in the oven for about 3 minutes at 250 degrees, cut into slices and serve for dinner.
