I recently browsed through my various culinary magazines that I have been buying for years .. I have a lot of them .. and in some old ones from 2000 and some years .. I found very good and fine recipes that I couldn't even make then because we didn't have a lot of these ingredients available for purchase .. Since I really like bulgur and often make a salad or some side dish, this one immediately caught my eye .. It is very simple and great as a refreshing dish, ideal for spring and summer .. - Boil the stock, add the bulgur and cook for about 15-20 minutes, see when it absorbs the stock. Allow to cool. Wash peppers and tomatoes and cut into smaller cubes. Peel a squash, grate it and slice it. Mix bulgur and vegetables and herbs. Mix lemon juice, salt, pepper, ground pepper with oil and pour over the salad.
Serve alone or with some meat, fish as desired ..
