Berry ragout with meatballs
A wonderful light summer dish, the combination of young vegetables and meatballs in a fine sauce is perfect.
- For the dumplings, mix the minced meat with the egg, grated onion, add a slice of bread previously soaked in a little milk, add spices, mix well by hand and put in the fridge to stand. Meanwhile, finely chop the onion and add 2 tablespoons of oil, simmer lightly, add, peas and beans, and lightly simmer drizzled with 2dl of lukewarm water, peel the tomato, chop and mix the vegetables, when the vegetables have softened, thicken the ragout with a spoonful of flour mixed with tomato juice, add a little lukewarm water if necessary for medium density Heat olive oil in a pan, make small balls the size of walnuts and bake them on all sides, drain them on absorbent paper, and then lower them into the ragout, finally add thyme and basil to boil for a few minutes. Good taste!
