Batatouille
it actually started by roasting two peppers (horns) and then I (inexplicably) got the idea to make ... roasted sweet potatoes with vegetables that go into ratatouille, i.e. batatouille in my opinion
Preparation steps
- Put two red peppers (horns in this case) in aluminum foil and bake for half an hour in the oven. Let them stand for a while - they are easier to peel, and then cut them into strips
- Chop the onion into semicircles, a couple of cloves of garlic into fetishes, the balance and the zucchini into cubes. Chop two tomatoes (peeled) into cubes.
- Put onion and garlic in a little olive oil, then add the rest of the vegetables and simmer briefly. Add the tomato passato (as needed to cover the vegetables) and simmer for another 10 minutes. Add spices (thyme, salt, pepper)
- Peel a sweet potato and cut it lengthwise, sprinkle it with red pepper, chili powder and salt, add olive oil and stir to coat with oil and spices. Bake for about 20 minutes at 175-180 degrees.
- If you have leftover vegetables, you can eat them cold, ie on bread as a sandwich (in my case, the bread was from the previous day) ... Put a spoonful of two vegetables on feta bread, grate the cheese and bake briefly ... very tasty!
