Aajja au merguez
Tunisian specialty made of sudzukica or thinner sausages with fresh meat.
- Fry the marjoram in oil until golden brown. Add the diced tomatoes, garlic and peppers.
- Let it simmer and stir occasionally, then add tomato concentrate, harissa or ajvar, coriander and capers. Add salt, pepper and mix everything and leave a little more to simmer.
- At the very end, add whole eggs (not beaten). Mix lightly, sprinkle with dry mint and serve.
