A berry mane in my way
Another in a series of light and healthy ancient dishes on a spoon in the family. Since I don't like beans that are usually put in it, I much prefer the maneštra than berries with chickpeas.
- Soak the chickpeas and let them soak overnight to soften. First, boil the ribs and a piece of bacon separately (about 10 minutes) to release the fat.
- In a pot, sauté chopped onion and garlic in a little oil. When yellow, add the boiled ribs and a piece of bacon and cover. After about 10 minutes, add the chickpeas and cleaned young corn. Drizzle and leave to cook covered.
- In 15-20 minutes, add the chopped carrots to the rings and the diced potatoes. Towards the end, add homemade salsa and season. When the maneštra is cooked, leave it to stand briefly in a covered pot.
Serve warm with homemade bread under the baking lid.
