Pickled octopus
When buying an octopus should pay attention to the clarity of the eyes and skin color. The octopus should be cleaned immediately because it quickly takes on an intense odor, and after cleaning the octopus mass could be significantly reduced.

Preparation steps
- Cut the octopus into larger pieces and cook covered in a pan with a little water over low heat until the octopus softens (60-90 minutes) with occasional watering and turning.
- Drain the cooked octopus, cool and cut into sticks.
- Put the octopus in a jar for the winter, pour a mixture of oil, vinegar, water, salt, pepper and garlic cut into leaves and finally add the sprigs of thyme.
- Close the jar and keep in the refrigerator for a few days.
Serving
Serve with lemon slices and bread.
Advice
If you want to serve pickled octopus in a more attractive way, stick it on cocktail sticks.
