Preparation steps

  • Wash the rice in a bowl under a stream of cold water and drain well.
  • Place the drained rice in an espresso pot with water, add salt, cover and bring to a boil.
  • Then place the flame mesh under the pot, reduce the flame to a minimum (so that the pot beeps quietly and evenly) and cook for about 40 minutes.
  • In a bowl, sauté sliced ​​vegetables in a little oil, add salt, cooked rice and cover.
  • Stir everything together well and simmer for about 10 minutes.

Serving

Sprinkle the rice and vegetables prepared in this way with finely chopped parsley and serve.

Advice

If you do not have an espresso pot, cook the rice in another pan, but so that it is cooked covered, over a low heat until all the water has evaporated.
